Butternut Squash Soup Recipe

Serves 3

3 tablespoons chopped onion
2 tablespoons margarine
3 cups peeled and cubed butternut squash
1.5 cups water  
1/4 teaspoon dried marjoram
1/8 teaspoon ground black pepper
1/8 teaspoon ground cayenne pepper
1 (8 ounce) package cream cheese
2 cubes chicken bouillon

1.  In a large saucepan, saute the onions in margarine until tender.
2. Toss in the squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20-25 minutes.
3.  Puree the squash and cream cheese in a blender or food processor until smooth. Return to saucepan, and heat through. Do not allow to boil.
