Cream of Asparagus Soup Recipe

Serves 8

2 pinches ground black pepper
2-1/2 cups vegetable broth
2 cups soy milk
1 cup yogurt
2 teaspoons lemon juice
1/2 cup grated Parmesan cheese
2 pounds fresh asparagus
1-1/2 cups chopped onion
1 cup vegetable broth
2 tablespoons butter
1/4 cup all-purpose flour
2 teaspoons salt

1.  Put asparagus and onion in a saucepan with some vegetable broth and bring the broth to a boil, reduce heat and let simmer until the vegetables are tender.  Reserve a few asparagus tips for garnish. Place remaining vegetable mixture in an electric blender and puree until smooth.
2..  Melt butter in the pan and sprinkle flour, salt, and pepper into the butter. Do not let the flour brown. Allow the mixture to cook only 2 minutes. Stir in remaining vegetable broth and increase the heat to boil
3.  Stir the vegetable puree and milk into the saucepan. Whisk yogurt into the mixture and  lemon juice. Stir until heated through, then serve into bowls. Garnish with reserved asparagus tips. Sprinkle with Parmesan cheese if desired. Enjoy the cream of asparagus soup recipe!
