 Cream of Broccoli Soup Recipe

Serves 3

1 tablespoon and 1-1/2 teaspoons butter
1 tablespoon and 1-1/2 teaspoons flour
1 cup milk
ground black pepper to taste
1 tablespoon butter
1/2 onion, chopped
1/2 stalk celery, chopped
1-1/2 cups chicken broth
4 cups broccoli florets

1.  Melt  butter in stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 8 minutes.  Pour the soup into a blender halfway, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a pot.
2. In small saucepan, over medium-heat melt  butter, stir in flour and add milk then stir until thick and bubbly. Add to soup and season with pepper and serve.
