Cream of Cauliflower Soup Recipe

Serves 4

2/3 cup milk
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
2 teaspoons dry sherry
2 teaspoons chopped fresh parsley
1 tablespoon and 1 teaspoon butter
5/8 large onion, chopped
2-3/4 cloves garlic, minced
1-1/4 large potatoes, peeled and cubed
1-1/4 carrots, chopped
1-1/4 (14.5 ounce) cans chicken broth
5/8 head cauliflower, chopped

1.  In a large pot melt butter and then stir in onion and garlic and cook until onion is translucent, about 5-7 minutes.  Add in potatoes and carrots and cook 7 minutes more.
2. Pour in chicken broth and bring to a boil. Stir in cauliflower, cover, reduce heat and simmer until vegetables are tender, 15- 20 minutes. Remove from heat.
3.  Puree in batches in a blender then return to low heat and stir in milk, salt, pepper, nutmeg and sherry. Heat through. Serve garnished with parsley.
