Cream of Mushroom Soup Recipe
Serves 4
Ingredients
2 tablespoons all-purpose flour
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2/3 cup half-and-half
2 teaspoons sherry
3-1/3 cups sliced fresh mushrooms
1 cup chicken broth
1/3 cup chopped onion
1/8 teaspoon dried thyme
2 tablespoons butter
Ingredients

Directions
1. In a large heavy saucepan, cook mushrooms in the broth with onion and thyme for about 15 minutes. In blender, puree the mixture then set aside.
2. In the saucepan, melt the butter, whisk in the flour
until smooth. Add the salt, pepper, half and half and vegetable puree. Stirring
constantly, bring soup to a boil and cook until thickened. Adjust seasonings to
taste, and add sherry if desired.
