Curried Carrot Soup Recipe

Serves 4

1-1/4 pounds carrots, chopped
2-2/3 cups vegetable broth
1-1/3 cups water, or as needed
1 tablespoon and 1 teaspoon vegetable oil
5/8 onion, chopped
2 teaspoons curry powder

1.  Heat oil in a large pot over medium heat then saute onion until tender and translucent. Add in the curry powder, carrots, vegetable broth and simmer until the carrots are soft, about 25 minutes.
2.  Puree carrots and broth to a blender. Pour back into the pot, and thin with water to your preferred consistency.
