Hungarian Mushroom Soup Recipe

Serves 3

1/2 cup milk
1 tablespoon and 1-1/2 teaspoons flour
1/2 teaspoon salt
ground black pepper to taste
1 teaspoon lemon juice
2 tablespoons chopped fresh parsley
1/4 cup sour cream
2 tablespoons unsalted butter
1 cup chopped onions
1/2 pound fresh mushrooms, sliced
1 teaspoon dried dill weed
1-1/2 teaspoons paprika
1-1/2 teaspoons soy sauce
1 cup chicken broth        

1.  Melt the butter in a pot. Saute the onions in the then add mushrooms and sauté.
2.  Stir in the dill, paprika, soy sauce and broth then reduce heat to low and simmer for 15 minutes.
3. In a separate small bowl, whisk the milk and flour together. Pour this into the soup and stir well to blend. Cover and simmer for 10-15 more minutes, stirring occasionally.
4. Add salt, ground black pepper, lemon juice, parsley and sour cream. Stir over low heat, 3- 5 minutes. Do not boil.
