Tomato Soup Recipe

Serves 4

1 tablespoon and 1 teaspoon butter
1 tablespoon and 1 teaspoon flour
3/4 teaspoon salt
1-1/4 teaspoons white sugar, or to taste
2-2/3 cups chopped fresh tomatoes
5/8 slice onion
2-3/4 whole cloves
1-1/3 cups chicken broth

1.  In a stockpot, combine the tomatoes, onion, cloves and chicken broth then bring to a boil for 20 minutes. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
2.  In the now empty stockpot, melt the butter and stir in the flour to make a roux, cooking until the roux is a medium brown. Whisk the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.
