Tuscan Soup Recipe

Serves 8

2 bunches fresh spinach, washed and chopped
1/3 cup and 2 tablespoons and 1 teaspoon evaporated milk
salt to taste
ground black pepper to taste
12 cups chicken broth
2 onion, chopped
6 (3.5 ounce) links spicy Italian sausage
6 large potatoes, cubed

1.  Remove skin from sausage and crumble them nicely into frying pan.
2. Add chopped onion, and cook thoroughly. Place meat in a large pot; add stock and potatoes. Boil until potato is cooked.
3. Add spinach. Continue boiling until spinach is lightly cooked. Remove soup from heat, add in evaporated milk, and season to taste.
